When having a category for movies and another for tv shows with different target folders - and say you are some kind of dumb and regularly forget to set the category when adding jobs in the ui. I wonder, is there a way to enforce choosing a category when drag-n-dropping new nzb in sabnzbd ui?

No way to enforce for drag and drop.
However, if you get your NZB's from an indexer they will have special tags inside the NZB that can help sort them automatically.
