I currently have sabnzbd+ set to email me when its finished a job. At least until I get used to how its setup and settled in.
Quite a few of the emails I get, are 'sabnzbd+ failed to complete job xxxxxxxxxx'. Yet the video appears either in the destination TV show folder, or the 'completed' downloads folder (if my categories aren't set up properly)
So is it failing because it just didn't download a readme.txt or something? Am I safe to assume a video has completed successfully if its in the 'completed' folder or has been moved to a destination folder via categories? Just a little worried in case I'll have patches of bad videos here and there that I won't realise until they fail on my halfway through watching.

Check your connection in Status and Interface settings window.
Use Test Server in Config > Servers.

You will have to look at the details in the History page.
When you suspect truly incorrect status conclusions, scan the warnings and errors in the Connections page.
If the final folder does not start with _FAILED_, you can assume things are OK.
