Let say I download 10 files, each is a multi-part RAR. If 2 out of those 10 RAR files are corrupt then sabnzdb will not unrar the good 8. The same goes for PAR files. I have to manually do them by hand.
Is there a way that it can post-process good RAR's in the same nzb and discard the rest?

Check your connection in Status and Interface settings window.

There's not much sense in unpacking partial RARs most of the time.
Often unrar will refuse unpacking when there's a segment missing.
You can do this better manually using WinRAR.
Other than that it's rather against the whole idea of SABnzbd, which is to automate the workflow.
This means that botched posts will not be handled in a semi-clever way.
That's something for the user to try.
