"Check result of unpacking"

Can anyone explain what exactly this option does? How does it "check" unpacked files?

It checks whether or nor the files listed in an archive (RAR) have actually been unpacked.
This prevents silent failure when the unrar tool fails to unpack files, without telling SABnzbd.
