Hey guys,
Right now I am using the feature to automatically delete files like the *.nfo, samples etc... so once everything is done, all I am left with is a folder structure like so:
-- TV
-- -- [show] [season]
-- -- -- [episode].mkv
Sweet... BUT, is there any way to just dump that single .mkv file out into the master "TV" folder, and then delete the season folder? I end up deleting the folder anyways so it seems to to have that one bit of extra work.

Enable TV Folder Sorting in cofnig>folders. You can use the preset "1x05 Season Folder", this will places all series of the same show in one folder.

For this to benefit my any extra, I would want to set my download folder to where I store my TV then. Right now, my downloads exist in a completely different area then where I store everything permanently. Sounds like it could be huge benefit but here's a related question then.
My Movies are stored in another completely different folder, if I customize the category "Folder/Path" can it be an absolute value? Ie., the notice on that page says it should be relative to you download directory.

Yes, absolute/fixed paths for the download folders are fine, you are not restricted to just relative paths.
You can also specify different fixed paths for different categories in config>categories if you keep certain things in different locations.
