Hoping someone has run into this issue before.
I have SAB configured with SSL and have dyndns running on my router. I have opened the relevant ports etc.
This means I can access SAB, sickbeard and couch from anywhere on my mobile phone.
However, when SAB starts downloading anything, it is no longer available through the DNS name, it just times out - I can browse to http://localhost: on a machine on my local network and still login ok.
Does anyone know what could be causing this problem ?

Check your connection in Status and Interface settings window.
Use Test Server in Config > Servers.
We will probably ask you to do a test using only basic settings. - Do you experience problems during repair or unpacking?
Enable +Debug logging in the Status and Interface settings window and share the relevant parts of the log here using [ code ] sections.

What speed is your internet, could it be timing out because is getting hammered with the downloading?

I think that there are roughly two possible reasons.
The system SABnzbd is running on is overloaded with SABnzbd.
This means that incoming traffic is not handled. Note that when the local interface
is still working, this cannot be the cause.
The other cause can be that you have a very limited upload bandwidth and
that all upload bandwidth is consumed by SABnzbd asking the server for articles.
This would be typical for ADSL and some older cable providers.
