Hi,
I am very new to the NZB scene, although I've been at it for literally DAYS, and I am stuck, I hate to admin defeat but no matter how many tutorials I follow I just can't seem to get it to work.
My problem is that when I add an NZB file to sab it add's fine, but doesn't start downloading at all, it just sits there and torments me. I have no errors in the status log.
I honestly can't figure out how to do it, another problem is getting sickbeard to auto download the NZB's but that's another story, I'd love to get the downloads working first if anyone has an idea?

Check your connection in Status and Interface settings window.
Use Test Server in Config > Servers.
We will probably ask you to do a test using only basic settings. - Do you experience problems during repair or unpacking?
Enable +Debug logging in the Status and Interface settings window and share the relevant parts of the log here using [ code ] sections.

You did define a valid Usenet server in Config->Servers?
Did you use the test button on the server page?
The server has at least one connection defined?
The server's "enable" checkbox is checked?
SABnzbd is not paused (the square at the top right should be yellow and not red)?

I don't understand it really, I thought that was supposed to be my IP to my server, im guessing this is where I have gone wrong.
for example if I was to use nzbmatrix.com or nzb.su how would I find out the port or connections or if it's SSL etc, sorry I really don't understand it as of yet!

I'm afraid you are missing some basic issues.
SABnzbd doesn't have it own user interface, but it runs an internal web-server,
to which your web browser connects. For this it uses the IP address of your system and a port.
Next you need a source for NZB files, like nzbmatrix.com.
An NZB file just describes what you need to get from Usenet.
Then comes the most important part.
You need to have a subscription to a Usenet server, like Giganews, Supernews, Astraweb.
These cost money (on average about $10/month).
Some ISP have their own free Usenet servers, but these often have limitations.
(Do you know if your ISP has one?)
There are a few free servers, but these come with severe restrictions and often need trickery,
not some something for novice users.
