Is there someway I can define "default" to mean "+Delete" so I don't have to sit and set it everywhere?
I vent into "Switches/Post Processing" and checked everything except "enable quick check" but still it doesn't seem to repair anything as default.

For other junk (nfo, srr etc.) you can use the cleanup filter in Config->General.

Hm, could I use the program to download podcasts from RSS as well, by setting a category to be download only?

No, since these would not be NZB files and will be rejected.

Download means, download the content described by the NZB file
