Say for example I'm downloading an anime series. Well all of the anime newsgroups have "anime" in the name, so the easy way to sort would be to assign *.anime* or similar to the appropriate category. Ditto for adding *.sounds.* to the Music category, and many others.
As far as I'm aware this is not currently possible.

0.5.3+ only You can use simple wild-card expressions like "apps.*'
But this doesn't seem to work with newsgroup names (using 0.5.3 RC1 of course), I still have to specify all the groups individually for it to work.

My guess is that the NZB contains multiple groups.
So far, SABnzbd will test only for the first group it encounters.
I'll check if that can be easily fixed.
If not, you'll have to wait until release 0.6.0.

The group testing, including wild-cards, does work.
With NZB's containing multiple groups you need to be careful.
One of the groups may also be matched by another category.
Also be careful that the category isn't derived from the indexer (like nzbs.org or nzbmatrix.com).
