I am having issues whereby when using SABNZB my mac hangs & I am unable to access any open window or app.
I have to reboot to get access to my mac.
This only happens when using SABNZB.
Can anyone help?

Check your connection in Status and Interface settings window.
Use Test Server in Config > Servers.
We will probably ask you to do a test using only basic settings. - Do you experience problems during repair or unpacking?
Enable +Debug logging in the Status and Interface settings window and share the relevant parts of the log here using [ code ] sections.

I had the watch folder set yo downloads, and when it hangs a finder relaunch seems to help. When watched folder not set, seems to be OK.

Immediatly report it to Apple! Because a user app that can hang an operating system ... that's a big fault in the OS (=MacOS).
