So about 2 months or so ago I started noticing that I wasn't seeing new episodes of some shows. When I checked Sonarr they showed up in the queue appearing to be finished, but they were stuck. When I check sabnzbd they were downloaded but were sitting with an "Error renaming" c:\...\_UNPACK_Downloadname to c:\...\Downloadname
I end up having to manually import the files. It doesn't happen all the time. I've done some research and I've excluded the download locations from AV. I tested by downloading a full season of a show and 2 of 10 failed again.
Any other things I can try? I've never seen this before just the past 2 months or so.

Check your connection in Status and Interface settings window.
Use Test Server in Config > Servers.
We will probably ask you to do a test using only basic settings. - Do you experience problems during repair or unpacking?
Enable +Debug logging in the Status and Interface settings window and share the relevant parts of the log here using [ code ] sections.
Re: Error renaming
It is most likely anti-virus or anti-malware programs that block SABnzbd.
You can inspect the log (click the Wrench icon and then click Show Logging), it should show you in more detail why it can't rename.
