How can I stop SABnzb from continually downloading a completed and deleted series?

It's not sabnzbd that adds the NZBs, that would be you or Sonarr. You should check why it keeps adding stuff. If you don't want a show, season or episode, you should unmonitor those in Sonarr.
Using Multi options you can quickly select all jobs in the queue and delete them. It's the icon on the top right of the queue.

i have only 3 series being monitored and the one I stopped /deleted keeps d/l even though i find it nowhere?

Maybe it's in your activity-tab? Restart Sonarr might help?
